Family film night fajitas
Chicken, vegetable and rice fajitas.
We have a weekly tradition in my house. Family film night.
At the end of a long and busy week, Olivia and William get to stay up late and we all snuggle up together under a blanket watching the film we’ve all chosen.
It’s a night for us all to switch off from our every-day stresses and commitments. We get to enjoy being in each other’s company and it helps to keep us connected as a family.
So when Santa Maria (formerly known as Discovery Foods) offered to help me make a family film night even more of a family affair I wasn’t going to refuse.
The excitement began when we received the box of goodies, looking eerily like a ‘Deal or No Deal’ box. The similarity certainly wasn’t lost on Olivia and William who promptly started playing their own version of the TV show with it.
The ‘prize’ wasn’t shabby either: it was all the Santa Maria products I would need to make fajitas plus a copy of Shrek on DVD.
I enjoy fajitas, it’s such a sociable family meal. There’s something nice about sitting around a table together and ‘building’ your own meal while you chat and unwind.
I also enjoy the fact that fajitas can be messy – cue lots of smiles and laughter as we try our best to gobble them up.
Fajitas are also incredibly easy to make and can include any of your favourite foods.
Here’s my recipe for chicken, vegetable and rice fajitas. It’s ridiculously easy and ridiculously delicious.
It serves 4 and takes about 20 minutes to prepare and cook.
What you will need
- 500g of chicken
- 200g of mixed vegetables (I used carrots, green beans, baby sweetcorn and some broccoli)
- 1 packet of flavoured rice
- 1 packet of Santa Maria fajita seasoning mix (I used the medium flavour, but you can choose hot if you wish)
- 1 packet of Santa Maria plain flour soft tortillas
- Jalapeños (optional)
- Grated cheese
- Sour cream or onion and garlic dip
- 1 bag of nachos or Santa Maria’s sweet chilli nacho rolls
What you need to do
Prepare the flavoured rice, following the instructions on the back of the packet. It normally takes about 20 minutes for this rice to cook.
Slice the chicken into strips and fry in a saucepan until browned.
Peel and slice the vegetables if needed. Add them to the frying pan.
Add the fajita seasoning mix to the pan. Ensure it coats as much of the food as possible.
Once the rice and the meat and vegetables are ready, warm the tortillas.
Serve everything in the middle of the table with the grated cheese, dips, nachos and jalapeños, and let everyone help themselves!
We finished off our meal with a screening of Shrek; settling ourselves on the sofa, cuddling up under a blanket and turning the lights down low ready for the film to begin.
The only thing that was missing was popcorn, but we were all so stuffed after the fajitas, I’m not sure we would have eaten any if even we’d had it!
