Strawberries are synonymous with a traditional British summer. Wheeled out in their bucket-loads at the end of June ready for Wimbledon, they’re a staple of our summer diets.
There’s something refreshing and ‘zingy’ about this particular fruit, but bowls full of strawberries and cream can get rather samey after a while.
Never fear though, strawberries are incredibly versatile. Here are 5 easy strawberry recipes perfect for summer.
Strawberry and chocolate flapjacks
I used a basic flapjack recipe to make these. I opted for some Jordans Quick and Creamy Porridge oats and instead of using dried fruit I added about 100g of roughly chopped strawberries to the mixture.
Once the flapjack mixture had been cooked, I cut the mixture into squares.
Next, I melted 100g of milk chocolate and drizzled it over the flapjacks while they cooled. A fun and quick recipe, which makes enough for about 10 people.
This is a refreshing dessert that can be enjoyed any day of the week.
I followed the Edd Kimber’s Alpine Strawberry Fool recipe on the Jordans Cereals website. This particular recipe involves strawberries (obviously), custard, cream and a ‘secret’ ingredient – Jordans Country Crisp Strawberries cereal.
I’m a lover of the Jordans Country Crisp range of cereals and regularly enjoy them for breakfast with a side order of yoghurt. So using it in a slightly different way like this was a real treat.
The cereal adds a crunchy, nutty texture to this otherwise smooth dessert and complements the other ingredients nicely.
The Edd Kimber recipe makes enough for 6 portions, although I disregarded portion sizes because my serving glasses were rather large.
Upside-down strawberry cheesecake milkshake
This was inspired by the strawberry milkshake I was served at All Star Lanes at Westfield Stratford City.
For 2 milkshakes I chopped 2 large strawberries into rough quarters and put them at the bottom of 2 sundae glasses.
Next, I juiced 150g of strawberries (you could puree them instead if you don’t mind ‘bits’ in your milkshake) and poured it into a blender with 6 scoops of vanilla ice-cream.
Blend the strawberry juice/puree with the ice-cream until it’s a smooth consis10cy.
Pour into the glasses, over the top of the chopped strawberries. Depending on the size of your glasses, you could first add a scoop of strawberry ice-cream to the glass and then pour over the milkshake mixture.
Crumble a digestive biscuit and sprinkle over the top.
As you can see, Olivia and William really enjoyed them!
Strawberry cream meringue nests
These are super easy. You can make your own meringue if you want to, but I cheated and bought some ready-made meringue nests from the local supermarket.
If you buy the meringue, then this dessert really does only take a few minutes.
First of all, I hulled about 150g of strawberries and put them into my juicer (you could alternatively pop them into a blender).
Next, I whisked 300ml of double cream until it formed stiff peaks and then folded in the strawberry juice, adding a little at a time so that the liquid would not overpower the cream.
To serve, place your meringue next onto a plate, add a dollop of cream and decorate with chopped strawberries.
This easy strawberry recipe makes about 6 portions.
Strawberry and chocolate jam
Jam is surprisingly easy to make as long as you have a thermometer to ensure the jam mixture boils at the right temperature. This particular dual-flavoured jam is tasty and has become a favourite of my children.
