Some inspiration ahead of pancake day.
With Shrove Tuesday just around the corner, what’s your favourite pancake recipe? Do you like mixing ingredients up or prefer the traditional sugar and lemon juice option?
I must admit that I tend to be the latter (although I have been known to throw caution to the wind and add a dollop of jam or chocolate spread). It’s not that I’m a devotee to this traditional topping, it’s just that I’ve never really thought about what else might make a good recipe.
But that all changed last week when Warburtons sent us a box full of ‘pancake possibilities’ – sample sizes of numerous ingredients with which to make some fun pancake creations. Chilli jam, marmite, pistachios, mint leaves, mascarpone, granola, popping candy… it was certainly an eclectic mix of food! It even came with 7 recipes printed around a spinning wheel on the lid of the box so that we could play ‘pancake recipe roulette’.
We were excited at the thought of trying out some new pancake recipes so I combined these ingredients with some of my own and went to work creating and tasting some mouthwatering combinations.
So, without further ado, here are ten tasty pancake recipes in time for Shrove Tuesday (on March 4th this year).
Granola, yoghurt, banana and coconut pancakes
Mascarpone and marmite pancakes
Chilli jam and lime pancakes
Feta cheese and pancetta pancakes
Mascarpone, feta cheese and mint pancakes
Scrambled egg, pancetta and pistachio pancakes
Chocolate and popping candy pancakes
Strawberry cheesecake pancakes (mascarpone and strawberry sauce)
Golden syrup, whipped cream, banana and cinnamon pancakes

Please note: As already stated, I was sent a box of pancake ingredients (including 2 packs of pancakes) from Warburtons. The ‘chocolate and popping candy’, ‘chilli jam and lime’ and ‘mascarpone and marmite’ recipes came from Warburtons, but the rest are my own concoctions.
